Whole sea bass recipe in the oven

Here is a simple recipe to prepare a whole bar for two people:

Ingredients :
- 1 whole sea bass (also called sea bass), cleaned and scaled (around 600-800g)
- Salt and pepper, to taste
- 3 tablespoons of olive oil
- 1 lemon, cut into thin slices
- 2 sprigs of fresh rosemary
- 2 cloves of garlic, crushed
- 200g small potatoes, cut in half
- 200g cherry tomatoes
- 2 tablespoons chopped fresh parsley (to garnish)

Instructions :

1. Preheat your oven to 200°C.

2. Rinse the bar with cold water and dry it with paper towels. Season the fish inside and out with salt and pepper.

3. In a small bowl, mix 1 tablespoon of olive oil with the crushed garlic. Brush the oil and garlic mixture on both sides of the fish.

4. Insert a few lemon slices and rosemary sprigs inside the fish cavity.

5. In a baking dish, toss the potatoes and cherry tomatoes with the remaining 2 tablespoons olive oil, salt and pepper. Spread the vegetables in a single layer.

6. Place the fish on top of the vegetables and add the remaining lemon slices on top.

7. Bake the dish for 25 to 30 minutes, or until the fish is cooked through and the vegetables are tender. To check the cooking of the fish, the flesh should come away easily from the central bone.

8. Remove the dish from the oven and let sit for a few minutes. Sprinkle chopped parsley over the fish and vegetables before serving.

Serve this dish with a green salad or fresh bread for a complete and delicious meal.
