Skate Wing Recipe
Here is a simple and delicious recipe to prepare skate wings for two people:
Ingredients :
- 2 skate wings (around 300 to 500 g each)
- 2 tablespoons of butter
- 2 tablespoons of olive oil
- 1 shallot, finely chopped
- 2 cloves of garlic, finely chopped
- Juice of a lemon
- 2 tablespoons of capers
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions :
1. Rinse the skate wings in cold water and pat dry with paper towels. Season both sides of each wing with salt and pepper.
2. Heat the olive oil and a tablespoon of butter in a frying pan over medium heat. Add the skate wings and cook for about 4 minutes on each side, until nicely browned and cooked through. Remove the wings from the pan and keep them warm.
3. In the same pan, add the chopped shallot and garlic. Brown them over low heat for 2-3 minutes, until they are tender and lightly browned.
4. Add the lemon juice and capers to the pan. Bring the mixture to a boil and simmer for 1-2 minutes to allow the flavors to blend. Then stir in the remaining tablespoon of butter to thicken the sauce slightly.
5. To serve, place the skate wings on plates and generously cover them with the caper sauce. Sprinkle with chopped fresh parsley, if desired. Accompany this dish with steamed vegetables or rice for a complete meal.
