Sole Meunière Recipe
Sole meunière is a classic French dish that features sole, a delicate and flavorful flat fish. Here is a simple recipe to prepare sole meunière for two people:
Ingredients :
- 2 whole soles, cleaned by Khachane (around 300-400g each)
- 100g of flour
- Salt and pepper, to taste
- 100g butter, divided into two parts
- Juice of half a lemon
- 2 tablespoons chopped parsley
- 1-2 tablespoons of capers (optional)
Instructions :
1. You can prepare your fish by removing the head, tail and fins, if necessary. Or, we can do it for you. Rinse them in cold water and dry them with paper towels.
2. On a plate, mix the flour with salt and pepper. Lightly coat each fish with the flour, shaking off excess.
3. In a large frying pan, melt half the butter (50g) over medium heat. Once the butter is foaming, add the soles to the pan and cook for 3-4 minutes on each side, until golden and cooked through. Remove the fish from the pan and place them on a warm plate.
4. Wipe the pan with paper towels to remove residue. Melt the remaining butter (50g) in the pan over medium heat until it turns golden and gives off a nutty smell. Add the lemon juice, chopped parsley and capers (if using), and cook for 1 minute, stirring.
5. Pour the butter sauce over the soles and serve immediately, accompanied by seasonal vegetables or steamed potatoes.
