White Trout is a freshwater fish raised in clear, spring-fed ponds. Its flesh, lighter and finer than that of salmon trout, offers a delicate flavor highly appreciated by connoisseurs.

Cooking Suggestions:

  • Meunière style: Dredge in flour, cook in butter for 4 minutes per side, finish with a lemon juice sauce
  • Baked in parchment paper: 15-20 minutes at 200°C with garlic, lemon, and herbs
  • With almonds: Pan-poach in butter, sprinkle with toasted slivered almonds
  • In blue (live trout only)
