Serving Suggestion: serve well chilled with a mustard-dill sauce (the traditional Scandinavian gravlaxsås: mild mustard, sugar, vinegar, oil, dill).

Ideal with: blinis, rye bread, steamed potatoes, fennel-green apple salad, white asparagus, as raw tartare, on a homemade sushi bowl.
