The Gilt-head bream is a noble fish from the Mediterranean, also called pink bream. A cousin to the sea bream, it seduces with its fine, white, and flavorful flesh, and is among the most appreciated fish by discerning amateurs.

- En papillote (in parchment paper) with Mediterranean vegetables and a splash of white wine
