Cockles are small shellfish buried in the sand of Atlantic beaches, prized for their tender flesh and delicate, briny flavor. Thinner than mussels, they offer a subtle and refined taste.

Preparation:
- Mandatory purging: soak for 1 to 2 hours in very salty water (3% salt) to allow them to expel sand. Change the water if necessary.
- Marinara style cooking: open for 3-4 minutes over high heat with shallots, garlic, white wine, and parsley. Serve immediately after opening.
Ideal with: linguine alle vongole, paella, fish soup, french fries, parsley butter sauce, creamy risotto.
Storage: keep refrigerated (0-4°C), consume within 24-48 hours.
